Sugar-Free and Flourless Syrniki
Syrniki are an Eastern European breakfast superfood, super-high in protein and balanced in calories. When made without flour and sugar, they can be eaten daily for breakfast.
In contrast to traditional recipes, which involve sugar and flour, driving up the carbohydrate count, here is my recipe, where I’ve removed almost all the carbohydrates, while preserving what makes them so good.
Changes overview:
- Instead of a traditional wheat flour with high glycemic index, I use almond flour for the mixture and oat flour for coating
- I substituted the traditional sugar with sugar substitutes, like Erythritol.S

Sugar-Free and Flourless Syrniki

Ingredients
- 500 g 5% Fat Cottage Cheese prefer crumbly variety
- 2 Egg Yolks
- 30 g Almond Flour
- 0.5 tsp Guar Gum or Starch, 2-3 tbsp
- 3-4 tbsp Erythritol or other sugar substitutes
- 1 tsp Vanilla Extract
- Salt a pinch
- 2 tbsp Oat Flour a few tablespoons for coating
- 2 tbsp Cooking Oil Vegetable or Sunflower oils work best. For richer taste, it can be substituted with Ghee.
- Fresh Fruits or Berries for garnish
Instructions
- Mix the cottage cheese with the sweetener, egg yolks, almond flour, vanilla extract, salt, and thickener(Guar Gum or starch)
- Mash it well into a homogeneous mass with a fork or potato masher.
- Form the mass into short cylinders, about roughly 1.5-2 cm width
- Coat syrniki with the oat flour
- Fry in vegetable oil or ghee over medium heat for a few minutes on each side until golden brown and crispy
- Place the syrniki on a baking sheet and bake for 5 minutes at 180°C (350°F).
- Serve with fresh seasonal fruits and berries
