Syrniki are a breakfast superfood, super-high in protein and balanced in calories. In contrast to traditional recipes, which involve sugar and flour, driving up the carbohydrate count, here is my recipe, where I’ve removed almost all the carbohydrates, while preserving what makes them so good.

Ingredients
500g5% Fat Cottage Cheeseprefer crumbly variety
2Egg Yolks
30gAlmond Flour
0.5tspGuar Gumor Starch, 2-3 tbsp
3-4tbspErythritolor other sugar substitutes
1tspVanilla Extract
Salta pinch
2tbspOat Floura few tablespoons for coating
2tbspCooking OilVegetable or Sunflower oils work best. For richer taste, it can be substituted with Ghee.
Fresh Fruits or Berries for garnish
Instructions
Mix the cottage cheese with the sweetener, egg yolks, almond flour, vanilla extract, salt, and thickener(Guar Gum or starch)
Mash it well into a homogeneous mass with a fork or potato masher.
Form the mass into short cylinders, about roughly 1.5-2 cm width
Coat syrniki with the oat flour
Fry in vegetable oil or ghee over medium heat for a few minutes on each side until golden brown and crispy
Place the syrniki on a baking sheet and bake for 5 minutes at 180°C (350°F).
