Flourless Cottage Cheese Waffles

I’ve always had a soft spot for classic Belgian waffles, but over time, they had to drop out of my regular rotation — too carb-heavy, too low in nutrients.

Ingredients

  • 250 g cottage cheese or ricotta
  • 3 tbsp Erythritol or your preferred sweetener
  • 4 eggs
  • 3 tbsp almond flour
  • 2 tbsp coconut flour
  • tsp baking powder
  • 20 g butter
  • 1 tsp vanilla extract

Instructions

  • In a mixing bowl, combine the eggs, cottage cheese, and sweetener, and mix it well.
  • Add almond flour, coconut flour, and baking powder. Continue to mix.
  • Pour in the melted butter and vanilla extract, stirring until a uniform batter forms. You can skip this step to reduce the fat content.
  • Preheat your waffle maker and cook on high heat for about 5 minutes, or until your waffles are golden and ready.
  • Serve warm with unsweetened berry sauce or fresh fruits.
