I’ve always had a soft spot for classic Belgian waffles, but over time, they had to drop out of my regular rotation — they are very carb-heavy, and too low in nutrients.
But there are also good news — It’s totally possible to make a delicious, protein-packed alternative using cottage cheese and nut-based flours. By replacing flour with almond and coconut flours, and using cottage cheese as a base, we can significantly boosts the protein content while keeping the classical waffle texture.
And because they’re high in protein, they pair well with naturally sweet toppings like berries, making it easier to balance the carbs intake for those who are conscious about it.

Flourless Cottage Cheese Waffles

Ingredients
- 250 g cottage cheese or ricotta
- 3 tbsp Erythritol or your preferred sweetener
- 4 eggs
- 3 tbsp almond flour
- 2 tbsp coconut flour
- 1½ tsp baking powder
- 20 g butter
- 1 tsp vanilla extract
Instructions
- In a mixing bowl, combine the eggs, cottage cheese, and sweetener, and mix it well.
- Add almond flour, coconut flour, and baking powder. Continue to mix.
- Pour in the melted butter and vanilla extract, stirring until a uniform batter forms. You can skip this step to reduce the fat content.
- Preheat your waffle maker and cook on high heat for about 5 minutes, or until your waffles are golden and ready.
- Serve warm with unsweetened berry sauce or fresh fruits.
