Tahini Salad Dressing

A creamy, lemony tahini sauce made from sesame paste that’s lower in calories than oil and perfect for roasted veggies, salads, and grain bowls.

Ingredients

  • 2 tbsp Tahini
  • 1 tbsp lemon juice freshly squeezed
  • 2 tbsp cold water
  • 1 tsp olive oil optional
  • A pinch of salt to taste

Instructions

  • In a bowl, whisk together tahini, lemon juice, and cold water.
  • Keep whisking, even if the mixture seems to split or seize up at first. It will emulsify into a smooth, creamy sauce after a minute or two. Add a bit more water if it's too thick.
  • Stir in salt and a drizzle of olive oil, if using. Taste and adjust as needed.
